Rainbow Cake IN A JAR!!
Preheat your oven to 350 degrees or if you prefer to set your oven lower / by your own judgement, remember to lengthen the baking time :)
First, make up a plain cake mix (you can make it from scratch or just use a packaged quick-mix type). Seperate the mix into several different bowls and add colouring - this recipe calls for neon colourings in pink, yellow, green, turquoise,and purple but I’m sure you could use less colours or try pastel shades if you prefer :p Also, you don’t have to be precise with this, if you end up with more of one colour and less of another, it’s fine! :DNow, spray the inside of your jar(s) with nonstick cooking spray; then spoon about 3 tablespoons of the each batter into the jar, layering the colours up as you like. Once you’re done, grab a shallow baking dish and pour around 1/4” water into it, then place your cake jars in the dish and put the dish in the oven. Bake for 30-40 minutes or longer depending on the temperature - just keep checking it regularly and if the cake top doesn’t spring back to the touch pop it back in.
Remove jars and allow to cool completely. Also, if during baking, your cake puffed up and over the jar rim, don’t worry, just remove the excess and wipe around the jar top. Now, scoop a small portion from the top of your cake to make room for the topping and add a hefty dollop of vanilla buttercream. Sprinkle with colourful hundreds and thousands for decoration and it’s ready to eat - you can also cover it with a lid to store in the fridge or give it as a gift. Enough to brighten up anyone’s day!! :D
